Lunches:
   Roasted Portobello Sandwiches
   Carrot & Ginger Soup
   Baked Potato and Greens Soup with Potato-Wedge Croutons
   (the rest of the days get leftovers)
Dinners:
   Chicken Rama Thai Delight
   Yellow Peppers Stuffed with Quinoa, Corn, and Feta Cheese
   Chile Cornmeal Crusted Tofu served with Pepita Mole and a Southwestern Corn Pudding
   Pad Thai with Shrimp
